Pheasant on Toasted Garlic Bread
Prep time 20 minutes, Cook time: 55 minutes
Ingredients:
- 4 thin slices pancetta or bacon
- 4 pheasants
- 4 tbs (50g) butter
- 4 slices country bread
- 1 garlic clove
- salt and pepper
Cooking Method
Preheat oven to 350°F (180°C)
Wrap the slices of pancetta or bacon around the pheasant and secure with kitchen string. Season with the salt and pepper. Heat the butter in a large casserole (dutch oven) over high heat. Add the pheasants and sear for 5-10 minutes until coloured on all sides. Cover and cook in the oven for 45 minutes. Toast the bread slices, then rub them with the garlic and lay them on a serving platter. Remove the pheasants from the casserole and arrange them on the toasted bread slices.
Serve with roast potatoes
