Ingredients:
- 4 Quail
- 1 tbsp lemon juice
- 1⁄3 seasoned salt
- 1⁄2 cup flour 1
- ⁄4 cup butter
- 2⁄3 cup chicken broth
- 1⁄4 white grapes (seedless)
- 2 tbsp toasted almonds (sliced if desired)
- white pepper as needed
- 1⁄3 cup white wine
Preparation:
- Wash birds and drizzle with 1 tbsp lemon juice. Sprinkle with seasonings. Let stand for 50 min. then coat with flour.
- Saute with butter in saucepan until golden. Add wine, broth, remaining lemon juice, cover and simmer for 20 minutes. Then, add grapes and almonds and cook for an additional 5 minutes.
