Magnificent!! This was undoubtedly one of the best roasts that I have ever had. As a kid my Grandpa use to take my brother and I into his lumber camp during for the summer school break and we would enjoy the same meals that the camp cook prepared for the crew of twenty-year olds working the log drives. That meant steaks the size of a dinner plate and 1-2″ thick. Roasts and roast potatoes that were unbelievable, so good that you wanted thirds and fourths and fifths. This bison sirloin roast brought back all those memories as I savored every morsel. It was so good in fact, I jumped at the opportunity to buy 2 more when Northfork put them on sale. Just so I could share one with my step-son-in-law.
